Elderflower has long been used in traditional medicine as a diaphoretic, antipyretic, and diuretic agent. In recent years it was also discovered that it has antibacterial properties, antidepressant, antiviral and hypoglycemic properties, and to reduce the concentration of body fats and lipids.
Sambucus Nigra essential oil has been used as a preservative for its antimicrobial properties. Studies were conducted on meat preservation and found that meat treated with this essential oil had the lowest microbial counts compared to other untreated meats (See Pub Med). It also has high levels of antioxidants, which prevents lipid oxidation, that is, the rancidity of fats. Being a very good natural option as a preservative, thus avoiding the use of synthetics.
